We meander a lot, so we often stop late in the day and are off the next morning, but we like to eat well.

Most of Costco's prepared entrees (see first picture) are sealed in plastic bags and placing them on the 8" rack over water in the 10" pan with the lid on makes for a quick and tasty main course. Sizes vary, so choose according to how many people to feed. The chicken marsalla comes with two packs, each good for 2 people and is excellent. If you freeze these packs with the top edge folded back, they fit just right in the Isotherm fridge freezer. The Lamb shanks - well, your inner coyote will be exceedingly pleased. We heat precooked ribs in a plastic bag. We often pack leftovers from some of our better dinners in plastic bags and freeze them. Defrost the night before and dinner is ready in about 15 minutes and cleanup is quick. Since the plastic is heated to only 212F, we are not too concerned about out gassing from the plastic. While we have an oven, heating pastries (no water) is much simpler with the 8" rack. The lid is from our oven - alone worth the price of the oven.
