I don't think i'd try a horizontal rack on the side of the vehicle. If you don't want to carry them up top, I think you could contrive vertical carry system on the rear of the camper, next to the door. A few lengths of open pvc along the bottom would support the weight of the skis by the binding...

Southern Utah weather depends a lot on elevation. Zion canyon at 3000' elevation could be below freezing at night, probably 50's & 60's during the day. Bryce will be colder, well below freezing at night, since it sits at 9000'.

Why not a small inexpensive trailer? Certainly worth the cost of reducing the wear and risk of damage to your truck and camper.
