Those were made like this:

I used skin less organic chicken thighs.

Salt and pepper them.
Use a hot pan with a little OO (olive oil from now on )
Sear the meat until crisp on both sides.
In another pan caramelize 1 large onion cut in slices
Add some cheese( we used provolone on this one but any kind would work)on top of the meat
Deglaze with white wine and cook the wine down for a minute
Top with the onions
Serve on croutons ( I used acme sourdough baguette) 2 per slider

Enjoy with a good beer :D
 
For cooking noobs can you describe "carmelizing" and "deglazing"? Yes, I know, I'm not worthy :D

Carmelization is a complex, poorly understood process that produces hundreds of chemical products, and includes the following types of reaction :LOL: Just for you DD ( lifted from WIKI...)
