You're right it's all about compromise. We are all a bit different in our wants and situation. Acceptable camper size is a good example. Best you can do is make up a personal punch list and cover as many in the design as practical . The kicker is, you won't always know until you try, so don't beat yourself up after the fact...
Two things I meant to mention about a tailgate. First, it's been very useful before a trip for loading (and unloading) the camper especially when solo - less back and forth and also as workspace for those inevitable pretrip projects/mods.
Second, we once had an issue with a camper tie down on the road. Having a tailgate to enclose the camper gave some added peace of mind.
And regarding a bike, we carry two folding, 20" fat tire ebikes in the F350 supercab. Previously we occasionally carried two regular MBs inside. The new ones are (a bit) easier to store. Next time we might want to regain use of the back seat, and carry them on the hitch, IDK. Point is, I always try to plan in some flexibility whether for the truck, camper or gear we want to carry. You never know how you might want to do things differently in the future ...
