From what you say on your build page, the biggest thing that jumps out at me is that you move around a lot, and don't stay put. That said, big solar arrays are likely not your best solution, and you will want to maximize the charging you can get with moving / truck is running.
I've got capacity to do either on my build, with 100A via the alternator, or 465W of solar. Your Toyota has a notoriously stingy alternator, so you will need a DC-DC booster to convince it to send decent volts/amps to your camper batteries. CTEK D250S is a good start

In addition to that device, you will want to upgrade the wiring from your camper batteries to the truck alternator, to something like 2G or beefier. I added gauges in cab so I can see what is going on, and a remote switch for the Blue Sea ACR, so I can connect and disconnect the camper from the truck as necessary.
