As long as you have good interior vents below and above the fridge to allow good air flow I see no reason for exterior venting unless you are in the habit of leaving your camper in full sun on hot days with all the windows and vents closed, in which case a high vent to let out the small amount...

Mud can be a real problem with a jack unless you have some sort of wide platform for the jack base. Otherwise you can end up driving the jack into the mud rather than lifting the truck out of it.

Several years ago I made a set of blocks out of Trex decking with little aluminum cleats dadoed across them to keep them from slipping on top of each other, but I curse their weight every time I have to carry them.
LVL should save some weight.
I'm not familiar with the plastic fabric you are dealing with but have had good luck with contact cement for re-gluing similar products. You might want to try a very small area first to see if it is compatible. Be sure to apply a thin layer of the contact cement to both surfaces, then allow it...
Alan is right on point about the scarcity of campsites around here on summer weekends. A couple more private campgrounds you might try for last-minute cancellations are the KOA in Petaluma and the Olema Ranch Campground in Olema. Olema is, however, probably a little more than an hour from S.F...
