Condensation

Vic, does your mattress have a vinyl bottom cover? I'm thinking not, since it would block the moisture flow into the hypervent.
No it does not. Bamboo cloth cover all around.

I'd love to see just how much ventilation everyone is running. I suspect its just a crack and or not using lower and upper ventilation. Or maybe I'm just genetically disposed to exhale little moisture :)
Not a lot. On that last trip I mentioned, daytime temps were above freezing, and night time temps were around -10*C. At that temp, even with just two windows open the slightest amount the furnace seems to run way too often, and that's with the inside temp set to 45*F.

Are you cooking inside too?

We cook inside, but try to keep the coffee cup capped, and lids on the pots. I even grab a bite in between putting the lid back on. And pour milk over hot cereal right away to cool it down.

Our major moisture source is hot flashes (oy!) and breathing, sweating, etc. I'm not allowed to crack open the roof vent or windows while sleeping on cold nights  , but we use or garage thermostat, set to 35F for super cold sleeping. On a clear night, the roof is radiating heat to outer space at -460F, so it gets cold. I wonder what's behind the ceiling and wall insulation... probably mold.

If I cook inside the vents are fully open. Running the heater a lot to compensate for the ventilation is just something I've gotten used to doing. I also get no mold and don't have to wipe anything down. Always interesting to see what compromises others are willing to make!

When I built my Puma, I used rigid fibreglass, and some fibreglass pink (in the gaps), then taped it all up with Aluminum duct tape and then covered it all with a layer of reflectix, also fully taped. So, my camper is probably a LOT more airtight than most.

Guess we have to open more vents!
