Haven't seen this one discussed yet. ORU Kayaks, light, less than 30 lbs, hard side kayak that folds up. Saw them on Shark Tank. Watch the videos. Pretty interesting.

A friend of mine has one of those -- the "origami kayak" he calls it. Seems pretty cool.
But I haven't seen it in person, it's in Alaska.
 
Looks complicated, but transportable. For similar pricing and portability we've been pondering inflatable 'yaks, but also enjoy our current hard shell, Wilderness Pungo models for flat water / photography.
 
We are very happy with our Gnu from Alpacka. It is small, about 7 lbs (9 with seats) and holds the 2 of us.
 
the ORU kayak looks sweet! i would love to hear how they perform if anyone gets one

I have had the Advanced Elements 2 person for a year now and like it.
It folds up nicely and I can store it inside the camper rear on the shelf by the window. It weights about #45
