That's a pretty big job to get to it and I'd suggest that if you've thought about replacing the countertops now is the time or if you've ever thought about adding electrical devices (inverter, pump, etc., etc.) do it then. Not a difficult process but it takes time to get to all the screws (at least on my 2001). I purchased some corian (1/2") and cut it out. I had to glue some wood brackets on it for the screws to attach it (and some reinforcements) but it wasn't too terribly bad. Yes, it weighs a bit more than what was there but that had gotten wet over the years, swelled and was in so-so shape.
